Red Velvet Cake ·      ¾ cup of unsalted butter, softened  ·      ¼ cup neutral flavored oil  ·      1 ¼ cup sugar  ·      3 eggs, room temp ·      1 TBSP cocoa powder ·      2  cups All Purpose Flour ·      1 tsp of baking powder ·      ½  tsp baking soda ·      1 tsp salt ·      ¾  cup buttermilk, room temp ·      2 tsp vanilla extract ·      1 ounce red food coloring ·      1 tsp distilled white vinegar ·      (Optional) 1 cup semi-sweet chocolate chips – coat in cake batter or dust with flour  Cream Cheese Frosting ·      1 (8-ounce) packages cream cheese, softened ·      ½ cup unsalted butter, softened ·      1-2 cups confectioners' sugar (to taste) ·      1 teaspoon vanilla extract Instructions:    Preheat oven to 350°F    Grease a 9X5 in loaf pan (mine is 9.25x5.25 in) or a 10 cup Bundt Cake pan. This is a big cake so I would recommend a bundt pan to get a faster more even bake.   Sift together all dry ingredients except for sugar in a separate bowl   In mixer cream together softened butter, oil, and sugar until the mixture becomes light in color and fluffy texture. (2-3 minutes)   Add in whole eggs 1 at a time   Alternate mixing in Dry ingredients and buttermilk    Mix in red food coloring, vinegar, and vanilla extract until fully incorporated    (Optional) Fold in chocolate chips coated in batter or flour.   Transfer batter to a greased Bundt or loaf pan   For a Bundt pan bake at 350 for 35-45 minutes. For a loaf pan bake at 350 for 50-60 minutes.      Check if it’s done with a toothpick. The toothpick should come out clean or with a few dry crumbs.  Let the cake cool completely    While in the cake is in the cooling, make the cream cheese frosting.   Start by whipping your softened butter until smooth (2 mins). Cut your block of cream cheese into 8 smaller chunks and mix in one chunk at a time. Once the cream cheese all is combined with the butter add the powdered sugar in on low. Add the vanilla extract. Mix the frosting until smooth.
