Chilli Cheese Smash Burgers:
Ingredients:
Patties:
- 4-6 beef patties (75g each)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika (optional)
Burger Sauce:
- 120ml mayonnaise
- 30g mustard
- 30g tomato sauce
- 5g Worcestershire sauce
- 2g chilli flakes
- 3g crushed garlic
- 15ml gherkin juice
- 30g chopped gherkins
Chilli Cheese Sauce:
- 250g cheddar cheese, shredded
- 60ml cream
- 2-3 green chillies, diced (about 30g)
- 5g chilli powder
- 3g crushed garlic
- 60g caramelized onions
Caramelized Onions:
- 250g onions, sliced
- 15g butter
- Salt and pepper to taste
Assembly:
- 4-6 Brioche buns
- Chips (fries)
Instructions:
Caramelized Onions:
1. Melt 15g butter in a pan over low heat.
2. Add 250g sliced onions and cook for 30-40 minutes, stirring occasionally.
3. Season with salt and pepper to taste.
Burger Sauce:
1. Mix 120ml mayonnaise, 30g mustard, 30g tomato sauce, 5g Worcestershire sauce, 2g chilli flakes, 3g crushed garlic, 15ml gherkin juice, and 30g chopped gherkins in a bowl.
2. Refrigerate until ready.
Chilli Cheese Sauce:
1. Combine 250g cheddar cheese, 60ml cream, 2-3 diced green chillies, 5g chilli powder, 3g crushed garlic, and 60g caramelized onions in a saucepan.
2. Heat over low heat, stirring until cheese melts.
Smash Patties:
1. Heat a skillet or griddle over high heat.
2. Add 75g beef patties and smash down with a spatula.
3. Cook for 3-4 minutes or until browned.
4. Season with 1 tsp salt, 1/2 tsp black pepper, and 1/4 tsp paprika (if using).
5. Flip patties and cook for an additional 3-4 minutes or until cooked to your liking.
Assembly:
1. Place cooked patties on Brioche buns.
2. Top with burger sauce, chilli cheese sauce, and additional toppings (if desired).
3. Serve with chips (fries).
