Easy Chicken Curry recipe! Ingredients: -2 chicken breasts, cut into bite size pieces  -3-4 ish tbsp olive oil -1 yellow onion, chopped -1 red bell pepper, chopped -a few handfuls of shredded carrots -6 garlic cloves, minced -1 tbsp ginger, grated -2 tbsp miso paste -3 tbsp red curry paste -1 can coconut milk -cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) -juice of 1 lime -a few lime wedges (add juice when serving) -large handful of cilantro (plus some extra for serving) -salt and pepper to taste Instructions: -Start by cooking your cubed chicken in a pan in a little olive oil over medium /high heat. I seasoned with salt and pepper. Stir occasionally. Cook time should be about 4-5 minutes or so, or until it reaches 165 degrees internal temp. Once it’s done, set aside.  -In your pan (you can use the same pan if you want) heat up a little more olive oil over medium heat. Add your onions and sauté for a few minutes, stirring occasionally. Add some salt. -Add your bell pepper and sauté for a few more minutes or until the veggies start to soften. -Create a space in the pan. Add a splash more olive oil and add your garlic and ginger into the olive oil. Sauté for a minute or so, stirring frequently.  -Stir in miso paste. -Stir in red curry paste. -Add coconut milk. Stir until combined.  -Add shredded carrots.  -Bring to a simmer, cover, and let cook for about 5-10 minutes or until the coconut milk starts to reduce a little bit. -Add in your cornstarch slurry and stir well.  -Stir in cooked chicken and let cook a few more minutes so that everything gets nice and hot.  -Finish off the pot with a large handful of cilantro and the juice of 1 lime. -When serving, I like to add some fresh lime juice and extra cilantro.
