@thespicyventures: Grilled Salmon Kebabs ⠀ This easy-to-make, healthy dish will become your summer favorite once you try it. It can be grilled or baked in the oven and is perfect served with salads and rice. ⠀ You will need: - 2 pounds (1 kg) salmon fillet - 1/4 cup soy sauce - 1/4 cup hoisin sauce - 2 lemons - Skewers ⠀ For the salad: - 1/2 cup cooked orzo - 1-2 cucumbers - 1 avocado - 1-3 tomatoes - 2 tsp olive oil - Salt and pepper ⠀ 1. Cut the salmon into large cubes. In a bowl, mix the salmon cubes with the soy and hoisin sauces. Thinly slice the lemons. 2. Thread the salmon cubes and lemon slices onto skewers. Grill on a BBQ (covered with foil) or roast in a preheated 350°F oven. 3. For the salad, dice all the vegetables and mix with the cooked orzo and olive oil.
