I love that! I actually use to have a professor who was on food network and a few other tv shows I believe. He also owned a very successful cake shop in California for many many years! He eventually sold his shop and moved to Florida. He was more than qualified to teach even with the years of experience but because he was not actually certified I guess you could say to be Pastry Chef he had to go through the course in order to be allowed to teach! He was amazing!
