Korean Fried Chicken  Korean fried chicken is the best fried chicken in the world. There are secrets to get it crispy and it is not the double fry. This is the only recipe you need!  Directions  1. I use dark meat which includes chicken thigh, wings and drumsticks. You can make it boneless and cut up onto chunks.  2. Marinade the chicken in milk, baking soda, garlic, sugar, salt and soya sauce. The chicken will have carry over heat and will go up to 200F which is the temp all the connective tissue in the chicken melts.  5. Brush on the sauce that is 50% corn starch and 50% sauce.  Sauce: Add oil and toast the garlic. Then add in the brown sugar until bubbling and then throw in the rest of the ingredients. This makes a great sauce for other Korean dishes. For fried chicken, I take 50% of the sauce and 50% corn syrup or rice syrup to make a sticky sauce to brush on.
