Lasagne Soup Recipe Better than Lasagna!! Serves 5-6 - 500g lamb or beef mince - 3 tbsp oil - 1 onion - 1.5 tsp garlic paste or 4 cloves  - 2 tsp onion powder - 1 tsp garlic powder - 2 tsp oregano  - 1 tsp ground cumin - 2 tsp paprika - 1 tsp hot cayenne powder or chilli flakes - 1/2 tsp black or white pepper - 1 tsp salt or to taste - 1 tbsp tomato purée - 1 tbsp Worcestershire sauce - 1 tsp sugar - 1 can chopped tomatoes (400g) - 900ml veg or chicken stock - 350g pasta or lasagne sheets - 125ml double cream - 20g Parmesan - 30g Shredded mozarella  Method: 1. soften onions in oil for 2-3 mins. Add in all spices/seasonings, garlic paste and tomato purée. Cook for 2-3 mins 2. Add ground meat. Break down using back of spoon and keep mixing. Cook on medium-high heat till browned approx 10 mins. Add Worcestershire sauce 3. Add chopped tomatoes and sugar. Cook for further 5-10 mins 4. Add veggie or chicken stock. I used 2 cubes to 900ml boiling water to dissolve for the stock.  5. Add choice of pasta or if using lasagna sheets, break into smaller pieces 6. Cover and allow to simmer on low heat for 10 mins or until pasta is 80% cooked (may need less time depending on shape)  7. Add double cream and Parmesan and mix. Can remove from heat at this point and pasta will cook in residual heat. Taste salt at this point and adjust if necessary. (Better to have less to begin with rather than too much as Parmesan is also salty, you can always add more but you can’t remove it) 8. Add mozzarella cheese if you like and serve. #lasagna #lasagne
