Doing that shocks the espresso making it more bitter, as does instantly pouring it over ice. Pour it into a little bit of milk first. Let it acclimate to the cold

Try a hyperchiller!! It’s a container that you fill with water along the sealed edges and freeze it, then put the hot coffee/espresso in the well in the middle and it 100% chills it! I keep mine in the freezer 24/7 and rinse out between uses
