Carrot cake cupcakes An Easter classic, here’s a last minute recipe which is sooo easy to make in case you need a lil dessert over this bank holiday weekend! 240g plain flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 tbsp cinnamon powder 240g soft light brown sugar 1 tbsp apple cider vinegar 1 tsp vanilla extract 115ml vegetable oil 60ml almond milk  1  medium egg OR flax egg if vg (1 tbsp ground flaxseed diluted in 2 ½ tbsp water) 200g grated carrot Frosting 300g cream cheese 1 tsp vanilla  65g butter (softened) 70g icing sugar Pre-heat oven to 180C/ 360F and prepare a muffin tray with 12 small cupcake cases. In a jug, mix your milk and apple cider vinegar briefly and allow to curdle. Then add the oil and vanilla extract, whisk. In a large bowl, mix flour, baking soda, baking powder, salt, cinnamon and sugar. Pour the wet into the dry along with the grated carrot. Mix and if it is too dry just leave it for a minute or so for the carrot to release more of its water, then mix until incorporated. Spoon into the cupcake cases and then bake for 20 minutes. In this time, mix the cream cheese and butter in a standing mixer with paddle attachment until smooth. Then add vanilla and icing sugar and mix. Pop into the fridge until the cupcakes are out and cooled.
