I added sourdough and kneaded for 4-5 minutes until it was well mixed and let it rest for another 30 minutes. I added salt and kneaded for another 5 minutes. I made 4 folds with 30 minutes intervals and let the dough rest until it gained 50% volume. I shaped it, covered it with sesame seeds and put it in the basket. I let it sit at room temperature for 30 minutes and put it in the fridge for cold fermentation.
