I am back with my eggless Berliner recipe 🥳 This is a foolproof way to the softest, fluffiest, and just as delicious Berliners at home🍩✨ Try it out and let me know how you like it 🥰🕺🏻 Ingredients 🍩2 cup + 6 tbsp all purpose flour 🍩1 tsp instant dry yeast 🍩2 tbsp sugar 🍩1 cup warm milk 🍩¼ cup melted butter 🍩Oil, for frying Filling 🍩¼ cup dark chocolate 🍩¼ cup fresh cream 🍩¼ cup whipping cream Cinnamon sugar mix 🍩6 tbsp sugar 🍩3 tsp cinnamon powder Instructions 1. In a bowl, add flour, yeast, sugar, milk and butter. Mix everything using a wooden spoon/spatula to form a dough. ⁠2. Knead the dough using a stand mixer or hands for atleast 8-10 mins or until the dough starts to look shiny and stop sticking to your hand. ⁠3. To check if the dough is ready to proof, take small piece of dough and gently stretch it between your fingers . If the dough can be stretched thin enough and light passes through it , it means the dough is ready and it has passed the windowpane test. ⁠4. Transfer the dough in a bowl greased with oil. Cover the bowl with a cloth and let it proof for 1 hour in a dark warm place or until doubled in volume. ⁠5. Knock down the dough after the first proofing. ⁠6. Divide the dough into 40 grams balls each. Place these divided dough balls onto parchment paper and let it proof again for another 30 mins. ⁠7. Heat the oil for frying and once it is hot enough, carefully fry the donuts on each side till a nice golden brown colour is achieved. Roll them in cinnamon sugar while it’s still warm to coat evenly. ⁠8. While the donuts are cooling. To prepare the filling, start by making a dark chocolate ganache. Begin by chopping the chocolate. Heat the fresh cream in the microwave until it’s hot, then pour it over the chopped chocolate. Allow it to sit for a minute, then stir until you have a smooth, glossy ganache. ⁠9. Whip the whipping cream using an electric whisk until soft peaks are formed. Add in the dark chocolate ganache and whip it again to form stiff peaks. ⁠10.
