Charlotte Cake with Apples and Coffee  I used to bake this cake every fall until I got completely tired of it. But recently, I had the idea to give it a twist by adding coffee—and now, I’m obsessed all over again! For the cake batter: - 3 eggs - 200 g (1 cup)  granulated sugar - 120 g (1 cup) all purpose flour - 1 tsp vanilla extract - 1 tsp baking powder -  1/2 tsp butter for the pan For the filling and decoration:  - Apples 2 total (1 ½ for the filling, ½ for decoration)   -  3tbs Nesquik coffee powder  - 3 tbs Almond flour  1. Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan with melted butter.  2. Peel and core 1 ½ apples, then dice them into small chunks for the filling. Slice the remaining half apple into very thin slices for the rose petal decoration. In a small bowl, combine Nesquik coffee powder and almond flour, then coat the diced apple chunks in the mixture.   3. In a large mixing bowl, beat the eggs and sugar on high speed until pale and fluffy (about 5-7 minutes). Add vanilla extract if using. Sift in the flour and baking powder, then gently add into the egg mixture.  4. Pour half of the batter into the prepared pan, spreading it evenly across the bottom. Add the coated apple chunks in an even layer over the batter. Pour the remaining batter over the apples, ensuring they're fully covered.   5. Arrange the thin apple slices in a circular pattern on top, starting at the edge and overlapping them slightly to create a rose-like design.   6. Bake in the preheated oven for 40-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.   7. Let the cake cool in the pan for 10-15 minutes before carefully removing it. Optionally, dust with powdered sugar for an elegant finish.   Enjoy!
