Recipe Ingredients: • 6 bulbs garlic, peeled • 1 large piece ginger about 100g, peeled and chopped (or 3/4 of the amount of garlic that you are using) • 3 green chilies (adjust to taste) • 2 cups fresh coriander leaves (stems included) • 10–12 curry leaves • 2 tbsp water (or as needed for blending) Method: 1. In a blender or food processor, add the garlic, ginger, chilies, coriander, and curry leaves. 2. Add a little water and blend into a smooth paste. Scrape down the sides as needed. 4. Store in an airtight container in the fridge for up to a week, or freeze in small portions for longer use.
