This dish is light, elegant, and full of flavour — just how I’ve always loved it back home in Napoli, best enjoyed with crusty bread and a glass of chilled white wine. Ingredients (for 2–3 pax): • 800g (1.7 lb) fresh clams (vongole) • ½ cup dry white wine • 4 cherry tomatoes (halved) • 2 cloves garlic (center removed) • Fresh parsley • Olive oil • Chilli (optional) How to Make It: In a cold pan, add olive oil, garlic, chilli, and a sprig of parsley. Start sizzling gently, then remove the parsley sprig once fragrant. Add the clams, cover immediately with a lid, and let them heat up. Pour in the wine and let the alcohol evaporate. Add cherry tomatoes and half of the chopped parsley. Cook until the clams open completely. Serve hot, finish with the remaining fresh parsley, and enjoy this taste of the Mediterranean.
