please remember that you can make any fish sushi-grade by freezing it for AT LEAST 7 days in a regular freezer, no less. Fish already at sushi-grade has been frozen in an industrial freezer that gets to much lower temperatures, killing bacteria quicker. So, if you can't afford something that is priced as sushi-grade, just make sure its fully frozen for those 7 days before you thaw for raw or cured/smoked consumption

in the uk sashimi grade fish cannot be frozen, it is just a term meaning that the fish is extremely fresh and hasn’t had time for the bacteria to grow, i live by the coast so most wild fish i sell is sashimi but our salmon has to be farmed and bought in, but still sashimi grade
