You should put in the lemon juice AND use real honey instead of sugar. And wait six months at least. It will turn velvety - really soft to drink!

I keep the lemon skins in until they lose all color then replace them with fresh skins until they lose color also.
the lemon juice of all the lemons used as skins, replace that much of the water in the simple syrup.
My Nona showed me how her Papá made it and i've expanded ot to oranges, cherries and blueberries also! soooo good in a sipper glass to enjoy after supper.

Hmm. I know it’s not ‘proper’ but I’m thinking I need to do this with ALL the different citrus fruits I can find. Not had proper limoncello since I visited Palermo over a decade ago so going overboard seems appropriate I think 😂
