![Rocky Road Cookies [makes ~8 large cookies] Ingredients: 1 cup butter (room temp) 1 cup brown sugar 1/2 cup sugar 2 eggs 1 tsp vanilla 1/2 cup cocoa powder 1 cup cake flour* 1 1/2 cup flour 1 tsp corn starch 1 tsp espresso powder 1/2 tsp salt 1 1/2 cups chocolate chips 2 cups mini marshmallows (freeze so they melt less when baking) 3/4 cup nuts (I used almonds) Method: Mix butter and sugars until creamy. Then add in eggs and vanilla. In another bowl mix dry ingredients. Mix dry and wet ingredients just until mixed, then add in mix-ins. Optional, add marshmallows and chocolate on top before baking. Bake 9-11 minutes. *Notes: if you don’t have cake flour, you can do 1 cup of ap flour, remove 2 tbsp of flour from there, and then add in 2 tbsp corn starch. Mix well. So for this recipe, you can basically just use 2 1/3 cup flour and 2 tbsp + 1 tsp of corn starch. #baking #cookies #rockyroad #Recipe](/video/cover/7466928602471222574.webp)
