Armenian Gata with Cardamom and Orange Zest Taking my gata to the next level! This one is inspired by my sister, who always asks me to add cardamom to my baking. I thought, why not try it with gata as well? I made this entirely with brown sugar because I ran out of white, and it turned out so good that I think I’ll always use it for gata. But feel free to use any sugar you prefer. For the Dough: - 800 grams (6.5 cups) flour - 200 grams (1 cup) sugar - 8 grams yeast (can be instant) - A pinch of salt - 3 eggs (at room temperature) - 1 glass (250 ml) warm milk - 150 grams (2/3 cup) cold butter If you're using regular yeast, start by mixing it with the warm milk and 2 tsp of sugar in a small bowl. Cover and let it sit for a few minutes. In a mixing bowl or stand mixer, combine the flour, sugar, yeast mixture (or instant yeast), milk, and salt. Add the 3 eggs and mix well. Cut the cold butter into pieces and gradually add it to the dough. Mix thoroughly and knead for 5 minutes. Avoid adding extra flour, even if the dough seems sticky. Once ready, cover the dough and let it rise for 2-3 hours in a warm place or, ideally, overnight. For the Filling:  - 150 grams (2/3 cup) melted butter - 1 cup (200 grams) sugar - 3 cups (300 grams) almond flour - Zest of 1 orange - 2 tsp cardamom - 1 tsp vanilla extract - 1 egg yolk (for brushing) In a bowl, combine all the filling ingredients, ensuring there are no lumps of butter. The mixture should be crumbly. Divide the dough in half. Roll out the first half into a large rectangle. Spread half of the filling evenly, leaving a little space at the far edge. Press it down with your hands, then roll it tightly and lightly flatten it with a rolling pin. Cut into 8-10 pieces. Repeat with the second half of the dough. Transfer the pieces to a baking sheet. Poke the tops of the gata with a fork, and brush with the whisked egg yolk. Place in a preheated oven at 375°F/180°C and bake for 20-25 minutes, or until golden. Enjoy!
