Episode 69 | Getting out of the friend zone. #carrotcake #popcorn #caramel Spiced carrot cake with walnut raisin camera sauce, vanilla cream cheese, salted caramel popcorn ice cream, and pieces, finished off with vanilla custard sauce. The aim here was to recreate a carrot cake but more of a plated version. Surprisingly all elements worked wonderfully. I loved the spices coming through, the nuttiness, and especially that salted caramel popcorn ice cream. The addition of custard cream was also nice which gave a balance to the sweetness going on. What are your thoughts? The salted ice cream was made by making fresh popcorn and caramel. Seasoning it with flakey salt, making a custard base and mixing those. I let it marinate for an hour max, a bit of a blend and then strained it to make the ice cream. Honestly, I think this ice cream alone is interesting to finish a dinner course.
