20 minute butter chicken ✨ ~Day 7 of 30 easy family dinners~ RECIPE -> ~ ingredients: -2 tbsp olive oil -3 tbsp butter -1 medium yellow onion, diced -3 cloves garlic, minced -1 lb chicken (breasts or thighs) -1.5 tbsp garam masala -2 tsp ginger -1 tsp chili powder -1 tsp ground cumin -1/2 tsp turmeric -1.5 tsp salt -1/2 tsp pepper -1 lemon, juiced -1/2 cup Greek yogurt -1 cup heavy cream -8 oz tomato sauce -1/2 cup cilantro, chopped -1 cup basmati rice -2 cups water -naan bread, for serving ~ 1. In a medium saucepan, bring basmati rice and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until rice is fully cooked. 2. In a deep skillet, place olive oil and butter over medium heat. Dice the onion and mince the garlic, then add to oil and butter mixture. Sauté for 3-5 minutes.  3. Cube chicken and add to onion mixture. Add in garam masala, ginger, chili powder, cumin, turmeric, salt, and pepper and mix well. Cover and let cook for about 5 minutes over medium-high heat.   4. Add in lemon juice, Greek yogurt, heavy cream, and tomato sauce. Mix well and bring to a simmer. Mix in chopped cilantro.  5. Serve with basmati rice and warm naan.
