It's packed with protein and veggies and fun to slurp and eat with all those rice noodles in the broth! The broth is just slightly spicy, so you can always adjust to your own taste, and since rice noodles don't get soggy, you can enjoy this meal for the next few days! In a bowl, whisk together the chicken broth, soy sauce/ aminos, and arrowroot/tapioca/cornstarch, then whisk in the coconut sugar. Next, add 1 to of the olive oil to a large pan over medium heat. When the pan is hot, add the white part of the box choy, and cook for about 3-4 minutes then add the green part. Cook one minute more then remove the bok choy from the pan and transfer it to a plate. Add remaining oil to the pan and add the green onions, ginger, garlic and sambal oelek. Stir for about 2 minutes, then add the ground chicken. Break up the chicken into the smallest pieces possible. Once the chicken is cooked through, add the sauce to the pan, followed by the cooked bok choy. Once everything is coated well, add the cooked rice noodles and cook until heated through.
