Guys this is a lot of carbs… if you have a family history of diabetes, skip the rice and add some protein! Don’t forget the healthy fats like some avocado!

Boiling the potatoes whole is easier cuz once they are soft the skin peels right off without needing a peeler just your hands. So you can skip the peeling and cutting step
