@johngs: Easy Brunch Recipe below – this is one of my favourite quick and easy, delicious breakfast ideas I know. A mash up of my favourite Turkish eggs with Scandinavian style flavours. It’s very good, rich and indulgent, and perfect for a fabulous healthy brunch or healthy breakfast. Enjoy x John
Serves 2
4 eggs
300g Greek yogurt
A large handful of finely chopped dill
A large handful of finely chopped parsley leaves
3 spring onions, finely chopped
1 pickle, finely chopped
1 clove garlic, crushed
½ a red chilli, finely chopped
3 tbsp olive oil
The juice of ½ a lemon
Flat breads to serve
Salt and pepper
1. Boil the eggs for 7 minutes in a pan of simmering water. Place straight into icy water to cool and leave for about 5 minutes. Peel and set to one side.
2. Mix the yogurt with most of the herbs and spring onions. Add the pickle, 1 tbsp of pickle water, garlic and plenty of salt and pepper. Mix well.
3. Mix together the remaining herbs and spring onions with the red chilli, olive oil, lemon and salt.
4. To serve, dollop the yogurt onto two serving plates. Cut the eggs in half and place on top. Drizzle over the oil and dive on in with plenty of flatbreads.
