Freyja is a Modern Australian restaurant located on Collins St, in Melbourne CBD. The heritage-listed building is stunning, Gothic cathedral-style windows and a Nordic-inspiration.  The kitchen is led by Michellin-star experienced Executive Chef Jae Bang, with a menu that centres around local and regional produce, with a minimal waste philosophy.  For dinner, the only dining option is their $99 4-course Chef’s selection menu, but if you like you can visit for a la carte during lunch. The menu changes to whatever is in season and how the chef is feeling. You will not leave hungry! ⭐️ Iris Bakery Sourdough (add-on) ⭐️ Kohlrabi -  I could have a whole bowl of this for dinner!! ⭐️ Spring Bay Mussels, Smoked Paprika, Kelp Oil Sauce ⭐️ “Taste of Romaro” Salad, Turnip Cucumber Broth,  - you’ll never have another salad this incredible! ✔️ Beef Tartare, Smoked Egg Emulsion, Salted Green Strawberries - a bit eggy for my taste but still VERY good. ⭐️ Dry Aged Skate - loved that they provided two sauces! ✔️ Venison Sausage wrapped in Cabbage - on its own, I found gamey, but with the sauce, it was amazing. ✔️ Parsnip, Brussel Sprout & Hummus Salad ⭐️ Housemade Mascarpone Cream, Quince Jam, Poached Rhubarb, Jelly, Sichuan Pepper (Palate Cleanser) ✔️ Kombu Icecream, Plum Reduction, Figleaf Oil - I couldn’t actually taste kombu but loved it. Easily some of the best food we have had, in cohesion, presentation, innovation - so many wows. The only thing keeping it from being a 5 was the vibe, needed slightly louder music to drown out the conversations of others. I would also love a menu at the end telling me exactly what I had!
