Pavlova Ingredients: 85g egg whites 85g icing sugar 85g caster sugar 1–2 vanilla beans (seeds only) Pinch of sea salt Piping bag Parchment paper Baking spray oil¨ Process: Whisk eggy whites and sugar until stiff. Add icing sugar and stir through followed by vanilla beans. Pipe immediately using parchment paper base and baking spray oil for 1hr at 120c/ 248°F. Allowo to cool then disodlge.
