The epitome of a good Durban curry lies in the presence of Up to Date (UTD) potatoes – those bursty, gravy-soaking wonders. However, they’re not always on hand. Soft cooking potatoes serve as a fine alternative, followed by Sifra Potatoes. When tackling a curry, the timing for adding potatoes depends on the dish and your altitude. For instance, in a chicken fillet/breast curry, cubed UTD potatoes can cook concurrently. Yet, for lamb curry, I add UTD potatoes halfway through, or include them with the lamb if using Sifra. Living in Johannesburg at about 5000 ft above sea level means longer cooking times. In the absence of UTD or soft cooking potatoes, consider pre-cooking them before adding to the curry. Also, this is a chicken breast (bone in) curry on not fillets. I wanted to make a quick curry for the sake of this video but also wanted to emphasise that using bone-in cuts of meat can enhance the flavor and texture of the dish. The bone adds richness and depth to the curry as it cooks, contributing to a more flavorful curry. Additionally, cooking chicken on the bone can help prevent the meat from drying out, as bones can act as a natural insulator, keeping the chicken moist.
