I will always use pre-shredded cheese. The cellulose in it is perfectly safe to eat. It's fiber that naturally comes from plants.

We use our food processor, it takes 5 minutes for 2#s, and that's with cleanup. No spinning/turning anything manually. In case no one thought to use theirs for this reason.
