@chefmikaleon: Crispy smashed potato salad 🔥 Your favorite summer side but jazzed up with the perfect crunchy bite 🤤 Ingredients 3-4 lbs. Baby potatoes 1 cup mayonnaise ⅓ cup fresh dill, chopped ⅓ cup fresh cilantro, chopped 2 tbsp. dijon mustard Juice of 1 lemon 2 shallots, finely diced ⅓ cup pickled gherkins, chopped + 1 tbsp. of the pickling liquid Salt + pepper to taste 2 tsp. Celery seeds (optional)  Instructions Preheat the oven to 400F.   Bring a large pot of salted water to a boil. Add baby potatoes and cook until soft, about 20 minutes. Once ready, drain and let cool. Using the back of an oiled plate, smash each potato one by one until thin and add them to a large baking dish. Drizzle them with olive oil and a generous amount of salt and pepper. Bake for 40-55 minutes or until golden brown and very crispy. Remove from the oven and set aside.   In a small bowl, whisk together the mayonnaise, dill, cilantro, dijon mustard, lemon juice, shallot, salt, and pepper and celery seeds until smooth. In a large mixing bowl, add the crispy smashed potatoes and pour in the dressing. Stir until every potato is evenly coated. Taste and adjust salt and pepper if needed.
