Vegan Low-FODMAP Fried Rice Ingredients: 1. 1/2 recipe vegan low-FODMAP tofu scramble** 2. 1 1/2 cups cooked white rice 3. 3 carrots, chopped (~1 cup chopped) 4. 1-2 tsp toasted sesame oil 5. 1 tbsp rice vinegar 6. 1 tbsp lime juice (lemon works too) 7. 2 tbsp tamari or soy sauce 8. 1/2-2 inch knob fresh ginger, grated or 1/4-1/2 tsp ground ginger Directions: 1. Over medium-high heat, add toasted sesame oil to a pan 2. Add tofu scramble and white rice, then stir to combine 3. Add carrots and stir to combine 4. Add rice vinegar, lime/lemon juice, tamari/soy sauce, and ginger, then stir to combine 5. Stir intermittently for 3-5 minutes, or until everything is evenly heated through 6.
