I use imitation because it's cheaper

Real question: could you use both to get the best of both worlds?

Disagree - imitation is terrible. I tried it and it tastes bad.

Everything is better with pure rather than castoreum

Homemade pure vanilla extract is great for many reasons. Experimenting with different origins of vanilla beans/alcohols to get different undertones🤗

I've found that most people prefer my layer cakes and cupcakes (frostings, too) when I use imitation vanilla because it takes more like they're expecting a cake to taste, based on their boxed mix, bakery, and grocery store experiences.

Mendards carries a version that is called baking vanilla, and it is extra concentrated for baking

I use imitation vanilla for my cold brew coffee and the real stuff for baking.

Ok but I put a cap in diet cola. No heat required. I like the real deal for that.

Would this apply to a person who has a 2 gallon supply of homemade vanilla? My vanilla for baking has tons of vanilla bean specks.

I use the cheap stuff for things like banana bread or something similar. The real stuff for things that it’s the main thing.

Real extract production leaves behind the spent, now-flavorless vanilla pods. Ice cream companies buy them because it lets them put "made with 100% real vanilla" on the label, even though all the flavor is synthetic

Boondoggler Sans :
i feel like this changed from the last set of findings you guys published where tasters noted regular vanilla was only slightly better than the imitation, not that the imitation was better than the real stuff. Personally I don't use it often enough for it to be a problem to buy extract. If I did, I would probably buy splits and make a big batch for around the same price per oz as imitation.

Harry Ball :
Pure vanilla extract is made with alcohol that’s why it “burns” off during cooking. If you are going to put it to heat you should double the amount at least
