🥣 Comfort Recipes Day Nine: Red Lentil Dal // 1 brown onion (finely diced) 1 red onion (finely diced) 1 knob ginger (finely diced) 2 tbl sp garam masala 1 tbl sp turmeric 1/2 tbl sp cinnamon 1 cup red lentils (washed) 1 can whole tomato 500ml vegetable stock Garnish: Greek yogurt, fresh chopped coriander, fresh chopped red chilli & toasted naan bread Place large heavy pot on medium high heat with a glug of cooking oil or ghee. Add in onions & ginger and sweat them in the oil with some salt. Sweat them down for 5-8 minutes. Add in spices and mix through and cook out for a minute. Add in lentil and mix through as well for a minute, adding more oil if needed. Crush the whole tomato and add in, before pouring in vegetable stock. Season with salt and bring to simmer. Allow to simmer for 25-30 minutes, or until lentils are soft to the bite. Season with salt to taste to finish. Serve hot in bowl, garnish and enjoy with rice or naan bread. #dal #daal #lentils #veganrecipes #vegan
🥔DUCK FAT POTATOES 🥔 Welcome to Day 3 of 20 Days of Christmas Recipes. Today I thought let’s get a little bougie and make some stupidly crispy and crunchy duck fat potatoes. The key is to have the duck fat all nice and hot when you add your squashed potatoes to get them scrimping up immediately. As always the recipe is below and if you like send it to your love ones as a hint of what you want to eat on Christmas Day. 400gm duck fat 1 tea sp bicarb soda 2 shallots (peeled and quartered) 9 washed small potatoes 2 large sprigs rosemary Pepper and sea salt Preheat oven to 205 degrees Celsius. Pour your duck fat into a baking paper lined tray and then place in oven to get nice and hot. Cut your potatoes in halves and then place in a pot of cold water with bicarb and shallots. Bring up to a high simmer and then let it simmer until fork can pierce through potato with a touch of resistance. Strain potatoes and allow to cool for a moment. On baking paper and using the bottom of a jar, press down on potato skin side to create a slightly squashed effect. Do this all potatoes. Take hot duck fat tray out of oven and place potatoes in skin side down and scatter you shallot pieces. Spoon on fat on top and then pop into the oven for 40 or so minutes (until really golden). Add your picked rosemary sprigs, some cracked black pepper and a pinches of sea salt in and cook for another five minutes.
