@rachel.hornibrook: COOKIE DOUGH BARS ✨ A cookie dough version of my popular peanut butter cup bars. These taste incredible and are so easy to put together. The perfect no-bake snack/treat to have in the fridge on standby. These can also be frozen. Full recipe below, tag who would love these & don’t forget to save for later 📌 Follow me for lots of more easy & delicious recipes @rachelhornibrook Makes 16 140g oats 50g flaked almonds or cashew nuts Pinch salt 5 tbsp cashew butter 4 tbsp maple syrup 1.5 tsp vanilla extract 50ml milk 50g chocolate chips (milk or dark) To top 120g chocolate 1 tsp coconut oil Sprinkle of sea salt (optional) 1 lb bread loaf tin, greased & lined Blitz the oats, cashew nuts & salt together until fine. Add to a large bowl. Melt the peanut butter & maple syrup together for 30 seconds in the microwave, then add the milk and vanilla extract and whisk. Add this to the dry mix and stir. Add the chocolate chips & mix again. Flatten into your bread tin and set aside. Melt the chocolate to top along with the coconut oil in the microwave for 30 second bursts until smooth. Smoothen over the the bar mix and sprinkle some salt over. Leave to set in the fridge for at least 2 hours or overnight. Slice and enjoy. I sliced these into 16 bars (cutting across and through the centre). They will store for 5-6 days in the fridge or freeze perfectly too. #cookiedough #healthytreat #snack #nobake #FoodTok #irishfood
