You don’t lose any data that isn’t outright lie. Make a backup on iOS 26 via iTunes., restore your phone to iOS 18.5. Edit the info.plist file from the backup to correct the version number from 26.0 to 18.5., then you can restore the iTunes back up onto your phone and you’ve not lost any data
