"Velveeta Beef Pasta with Bowtie Noodles Yields: 6-8 servings Prep time: 10 minutes Cook time: 20-25 minutes Ingredients: 2.25 pounds ground beef 1 8 oz block of cream cheese, softened 1 big block of Velveeta cheese, cubed (e.g., 32 oz or 2 lb block) 1 medium onion, chopped 2 cloves garlic, minced 1 (14.5 oz) can diced tomatoes, undrained 4 cups beef broth (or 2 cups beef broth and 2 cups water) 1 lb (about 4 cups) bowtie pasta (farfalle), uncooked Salt and freshly ground black pepper, to taste Optional garnishes: fresh chopped parsley, shredded Parmesan cheese Instructions: Brown the Beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up with a spoon. Add Onion and Garlic: Once the beef is mostly browned, add the chopped onion to the pot. Cook until the onion is softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Drain Fat: Carefully drain any excess fat from the pot. Add Liquids and Tomatoes: Stir in the diced tomatoes (with their juices) and beef broth. Bring the mixture to a simmer. Add Pasta: Add the uncooked bowtie pasta to the pot. Stir well to ensure the pasta is submerged in the liquid. Simmer and Cook Pasta: Reduce the heat to medium-low, cover the pot, and simmer for 10-15 minutes, or until the pasta is tender, stirring occasionally to prevent sticking. The liquid should be mostly absorbed by the pasta. Stir in Cheeses: Remove the pot from the heat. Add the softened cream cheese and the cubed Velveeta cheese. Stir continuously until both cheeses are completely melted and the sauce is smooth and creamy. Season: Taste the pasta and season with salt and freshly ground black pepper as needed. Serve: Ladle into bowls and serve hot. Optionally, garnish with fresh chopped parsley or shredded Parmesan cheese. Enjoy your comforting Velveeta Beef Pasta! "
