Preheat oven to 350° F 2. In a medium bowl, whisk together the glutinous rice flour, sugar, and baking powder 3. In a large bowl, add the coconut milk, whole milk, 4 eggs and vanilla extract, whisk to combine 4. Slowly add in dry mixture into the wet. I added about 2/3 cup at a time and mixed well before adding more 5. Whisk in the melted butter. The batter should be smooth and thin with no clumps 6. Pour batter into a parchment lined 9x13 baking dish 7. Sprinkle with shredded coconut (optional, but highly recommend for that crispy top!) 8. Bake for 1 hour and 5 minutes 9. This is my second time baking this. Delicious! I didn't know there were different types of rice flour. The first time I baked this, it wasn't that chewy, but with the right riceflour, it turned out perfectly. thank you so much for sharing the recipe 🥰
