DISHES THAT STEAM - episode 5 is steamed silken tofu with chilli oil The best way to level up a packet of silken tofu is to make an addictive chilli oil dressing with lots of fresh herbs - so so delicious and easy to make  Serves 2 400g silken tofu 3 garlic cloves 2 spring onions 2 bird’s eye chillies 5g fresh coriander 1 1/2 tsp sesame oil 1 1/2 tbsp light soy sauce 1 tbsp Chinese black vinegar 1/2 tbsp oyster sauce 1/2 tsp sugar 1 tsp sesame seeds 2 tbsp chilli oil (mama yu chilli oil always) 30g peanuts 30g crispy shallots Carefully cut along the edges of the tofu packaging. If there’s excess liquid, drain it over the sink. Place a plate over the open end of the container, then flip it over gently. Cut small holes in all four diagonal corners of the packaging to allow air in, then slowly release the tofu. Fill a wok with 3cm of water and bring it to a boil. Lower the heat to medium-low, transfer the tofu to a heatproof plate and slice it into 1 ½ cm pieces. Cover with a lid and steam for 6 minutes. Mince the garlic, finely slice the spring onions and chilies, and roughly chop the coriander. Place the minced garlic and the white parts of the spring onions in a heatproof bowl. Heat 2 tbsp of vegetable oil in a pot over medium-high heat. When the oil starts to lightly smoke, pour it over the garlic and spring onions. Stir in the green parts of the spring onions, chilies, coriander and remaining seasonings and sauces - mix well. Pour the sauce over the steamed tofu. Garnish with crushed peanuts, crispy shallots, and a spoonful of chilli oil. #dishesthatsteam #steamedtofu
