Replying to @sarahpisciotta sourdough corn dogs!! recipe ⬇️ -12-16 all beef hotdogs (I love -@Applegate and Teton Waters) -290 grams (1 3/4 cups) fine yellow cornmeal -175g (1 1/4 cups) all-purpose flour -50 grams (1/4 cup) sugar -14 grams (1 Tablespoon) baking powder -3 grams (1/2 teaspoon) salt -1 egg -360 grams (1 1/2 cups) milk -140 grams (1/2 cup) sourdough discard, fed or unfed -2 tbsp butter, melted -2 tbsp honey -cornstarch -neutral frying oil (I like a mix of canola and beef tallow) 1. Whisk dry ingredients in a medium bowl (cornmeal, flour, sugar, baking powder, salt). 2. In a large bowl, whisk together the wet ingredients (discard, milk, honey, butter, egg). 3. Pour dry ingredients into bowl with wet ingredients and mix gently just to combine (lumps are fine, don’t over mix). Set aside.  4. Pour neutral oil into a large pot or Dutch oven to fill it ~4 inches deep). Heat over medium high heat until it reaches 350°F. 5. While oil is heating, remove hot dogs from package and pat dry with paper towels. Insert a stick into each one and break stick so that the whole thing will fit into the pot you are using. 6. Dust the dried hot dogs with cornstarch, use your hands to make sure the whole thing is covered. 7. Pour batter into a tall glass. Insert one hot dog at a time into the glass until it’s coated. Let excess drip off so that the layer isn’t too thick (shouldn’t be dripping everywhere when you hold it). 8. Insert at an angle into the hot oil and hold it by the stick for 5 seconds before letting it drop into the oil (prevents it from sticking to the bottom of the pot). If it looks like the batter on the top is splitting, use tongs to turn the corn dog immediately onto the other side. 7. Fry for 2-3 min per side, until golden brown. 8. Remove from oil and place on a wire rack lined with paper towels. 9. Pour any extra batter into a Ziploc bag and cut off a corner, squeeze random shapes into the oil and fry.
