Why would you reach for the stainless steel pan if you DON’T want fond? Just use a cast iron, carbon steel, or non-stick pan then

how do I clean the rivets on a steel pan. there is discoloration there and steel wool, tomato sauce, or even a sponge dont seem to do the trick?

I buy a 20lb box of sodium percarbonate ecogeeks(dot)com (pure oxygen bleach). I dissolve 2 tsp in a sink of hot water. I soak cookware for 20 mins or so and it’s all completely lifted. No scrubbing!
