SOUPTEMBER 🍂 Marry Me Chicken Soup Recipe⬇️ •1 lb chicken breast, seasoned •extra virgin olive oil •1/4 cup dry white wine (I used Chardonnay) •1 yellow onion, chopped •3 stalks of celery, chopped •3 carrots, chopped •(1 small parsnip, chopped—but I wasn’t a fan of this) •1 Tbsp unsalted butter •6 cloves fresh garlic, minced •5-6 Tbsp tomato paste •4-5 Tbsp chopped sun dried tomatoes (you'll use 1 Top of the oil from the jar) •6-7 cups chicken broth •1 tsp Italian seasoning •1/2 tsp dried parsley •1/2 tsp dried basil •1/2 tsp dried oregano •1/2 tsp salt •1/2 tsp black pepper •1/4 tsp red pepper flakes •1 bay leaf •3/4 cup heavy cream, room temperature •1/2 lb pasta (I used Tubetti Rigati) •fresh parsley, chopped •Parmesan cheese ********* Heat soup pot to medium, and add in enough EVOO to coat the bottom. Add in seasoned chicken, sear the outside and fully cook. Remove the chicken from the pot and let it rest before chopping up. Add in 1 Tbsp of sun dried tomato oil, then add in the onion. Sauté for a couple minutes and then add in the dry white wine. Deglaze and scrape up the fond (flavor bits from searing the chicken). Add in the celery, carrots (parsnips if you want) and season the veggies to layer the flavor. Cook for about 5 mins. Add in the butter and garlic. Cook for about 30 seconds. Leave a spot open so you can brown up the tomato paste first (to bring out the flavor) before mixing it all together. Once mixed, add in the sun dried tomatoes. And you'll never guess... you mix it all together! **you'll want to start cooking the pasta in a separate pot at this point & DON'T FORGET to salt the water!** Pour in the chicken broth, add in the seasonings, and bay leaf. Bring liquid to a simmer and cover with a lid. Simmer for 10 minutes. Remove the lid and turn the heat to low or just take pot off the heat before adding in the heavy cream (you don't want it to curdle). Bring the pot back to a low-med heat (take out the bay leaf) and add in the cooked pasta and cooked chicken pieces along with the parsley and Parmesan cheese. Taste & adjust the seasoning if needed.
