If I have to guess then, “sanding” isn’t the process to level the board, what would you recommend to level the whole thing fast enough without having to use big tools

no it's not. you shouldn't use these little sanders for a start and evenly go along the board with a block or even a long belt sander

Orbital sanders with lower grits have to be moved faster than 1” per second or you get the swirl marks, which are a pain in the a— to sand out. Move the sander lightly across the surface to get a flat even surface and make multiple passes before moving up in grit. Practice, practice, and oh yeah, practice.
