Low Carb/High Protein Manicotti I made this single serve manicotti for myself on an evening that the rest of my family was eating Baked Ziti. It turned out better than I expected. I’ll be making it again but this time a big batch of it for my entire family. RECIPE - Makes 1-2 servings INGREDIENTS: Flatbread: 1/2 cup cottage cheese 1 egg dash of garlic powder Filling & Topping: 6 Tbsp cottage cheese dash of Italian seasoning 1/2 cup marinara sauce 1/4 cup shredded mozzarella cheese parsley DIRECTIONS: 1. Preheat oven to 375 F. 2. Blend the flatbread ingredients and then pour out into a rectangular shape on a parchment lined baking sheet. 3. Bake for approximately 25 minutes. 4. Remove from the oven and cut lengthwise into thirds. 5. Place 2 Tbsp of cottage cheese on the end of each strip followed by a dash of Italian seasoning. 6. Roll each strip up and place them in a greased baking dish. 7. Top with marinara sauce, cheese and parsley. 8. Bake for another 15-20 minutes. Enjoy!
