🔥 Juicy Tandoori Lamb Chops Recipe 🔥
Marinated, seared, saucy and perfect over mash!
Ingredients:
For the marinade:
• ½ cup plain yoghurt
• 1 tbsp ginger & garlic paste
• 1 tbsp red chilli paste
• 1 tbsp lemon juice
• 1 tbsp white vinegar
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1 tsp chilli powder
• ½ tsp dried thyme
• 1 tsp dried parsley
• ½ tsp dried rosemary
• 1 tbsp tandoori spice
• 2 tbsp oil
• 800g lamb chops (about 8–10 pieces)
For the sauce:
• 2 medium tomatoes, blended
• 1 tsp sugar
• 2 tbsp oil
• 1 large onion, chopped
• 1–2 green chillies, finely chopped
• ½ tsp each of the same spices from earlier
• Juice of ½ lemon
• 2 tbsp chopped fresh coriander
• Extra coriander to finish
To serve:
• Creamy mashed potatoes
• Sliced cucumber & red onion salad

Method:
1. Marinate:
In a large bowl, mix yoghurt, ginger & garlic paste, red chilli paste, lemon juice, vinegar, spices, and herbs. Add 2 tbsp oil and mix again.
Add in lamb chops, coat well, and marinate for 1 hour (or overnight for best flavour).
2. Prep sauce:
Blend tomatoes until smooth. Add 1 tsp sugar to balance acidity.
3. Sear lamb:
Heat oil in a large pot. Sear lamb chops for 5 mins on each side until golden. Remove and set aside.
4. Make the base:
In the same oil, add chopped onion and green chilli. Cook for 5 mins.
Add the same spices (½ tsp each), plus lemon juice. Cook 2 mins.
5. Build the sauce:
Add blended tomatoes. Stir in fresh coriander. Cover and cook on high for 10 mins.
6. Finish:
Add back in the lamb chops. Mix well. Cook another 5 mins. Garnish with fresh coriander.
7. Serve:
Plate on creamy mash. Add cucumber & red onion salad on the side.
