No way he doing 20% profits. Food cost is about 33%. I know it doesn’t sound like much more than 30% but it’s huge. Looks like a full operating kitchen wirh lots of maintenance; much more than 20% overhead. He lucky if he’s turning a net profit after he pays himself.

That's 30% food cost, which sounds about right. Then you have to add everything else. Packaging, labor, utilities, rent, advertising and a dozen other operating costs.
