Here’s my recipe for healthy potato chip chocolate chip oatmeal cookies using my long-time fav chips from @kibofoods  I loveee @Kibofoods chips are GMO-free, gluten-free, dairy-free, plant based, and made with chickpeas which are a great source of plant-based protein and fiber!! I’ve been a fan of @kibofoods chips for years now and can’t recommend them enough! INGREDIENTS (makes 12 cookies) 3/4 cup quick cooking rolled oats 1 snack bag of crunched up sea salt @kibofoods chips 1/2 cup almond flour 1/4 cup of honey 1 egg 1/4 cup melted coconut oil 1 teaspoon vanilla extract 1/2 teaspoon baking powder 1/2 cup semisweet chocolate chips INSTRUCTIONS -Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper -In a mixing bowl bowl, combine the rolled oats, almond flour and baking powder and mix. -Add honey, egg, melted coconut oil, vanilla extract and mix well until the ingredients are well combined. Stir in the crushed @kibofoods chips and chocolate chips
