Cover and cook without stirring for 16 minutes, until the chicken is fully cooked and all its liquid evaporates. 2. Add veggies, spices, corn, and cream. Stir well , cover, simmer on low for 5 min. 3. Spread a little sriracha + mayo on tortillas, add a generous amount of chicken filling, place in baking dish. 4. Top each with mozzarella cheese, keeping cheese mostly inside to avoid sticking. 5. Bake on the middle rack at 250°C (top heat only) for 5 min, until cheese melts and tops are lightly golden.
