Happy Mid-Autumn Festival 中秋节, also known as Mooncake Festival 🥮✨🌕🎑. This is how to make our family recipe for traditional mooncakes with salted egg yolks. Mum brined these duck eggs for 4 weeks!! Definitely a labour of love but very much worth it cause look how beautiful they look!!! It’s a time of the year where we celebrate by lighting lanterns, holding big family reunion dinners, eating mooncakes and appreciating the round moon. Note: if you can’t get hold of salted egg yolks you can just skip this part but your mooncake will weigh 20g lighter so it might look a little flatter when stamping the mould  200g plain flour  4 tbsps cornstarch
120g golden syrup  1 tsp lye water 1/2 tsp vanilla extract 30g veg / peanut oil 
8 salted duck eggs 400g white lotus / chestnut / red bean paste  1 egg 

Add the plain flour to a bowl, then replace 4 tbsps of flour with  4 tbsps cornstarch.

Sieve the flour into the bowl and add golden syrup, lye water, vanilla extxract and oil. Mix well until everything’s combined, then knead until the dough is formed. Wrap in cling film and rest for 2 hours minimum. 

Gather your eggs and separate the yolks from the whites, steam the yolks for roughly 10 minutes then set aside to cool down. After 2 hours, divide the dough into 8 pieces, each weighing around 45g. Then roll into balls. Divide the mooncake paste into 8 pieces, each weighing around 50g. Then roll into balls.  Roll the dough so it’s about 3mm thick, place the paste in the centre of the dough, then flip and fold gently, then flip to the other side and gently pushed the corners in. Use the leftover flour from earlier (4 tbsps) to lightly coat the balls with flour. Cover with a towel to prevent the mooncakes from drying out whilst you repeat for the remaining pieces of dough. Line a baking try and add the mooncakes one by one, lightly dust your mould with flour then shape with your chosen style. Lightly spray the mooncakes with water to prevent any cracking.  Bake in preheated oven at 160 degrees for 10 mins, remove from oven, brush with egg wash, add back to oven for another 10 mins.  Store in a container for 2/3 days! #midautumnfestival #mooncakes
