That’s not really accurate. No company is pulling copper out of the ground at a high rate. They are putting fiber in as they can and leaving old wires. Only decommissioned facility wire is recycled

When I talked to our AT&T rep in 2018, the word was that they wanted out of copper by 2025.

the price for copper service is in fact not attractive. at work I've seen them charge up to $300/month for a single POTS line. 😳 the price has gone way up

Transmitting data through light seems like magic. I think people don't realize though how much we have been able to leverage the copper that is the ground already. VDSL2 and G.fast, that's real magic.
