The reason why the knight does not have a freedom motif is because they are a required/optional boss. You "fight" them regardless, the end cutscene is the same even if you beat them. Secret bosses get the motif, the knight is a not-so-secret boss.

i don't think that is it, that's more like "The Chase" theme, don't you think? i think toby most likely didn't include the "freedom" leitmotif because the knight isn't a secret boss (or atleast that i know of) and that he had "The Chase" theme in mind other than anything else.
