Thai Red Curry Thai Red Curry - 1.5 lb boneless chicken cubes (preferrably boneless thigh) - 2 small shallots chopped - 3-4 garlic cloves - 2 Thai red chili - 1 inch ginger - 2.5-3 tbsp Maesri Thai red curry paste - 1/2 tsp turmeric powder - 1/2 tsp red chilli powder - 1 tsp fish sauce - 1/2tsp brown sugar - 1 can (400ml) coconut milk - 2-3 Kaffir lime leaves - 1tsp lemon squeeze - Oil Vegetables: - 1/2 zucchini thickly sliced - 4-5 broccoli - 1/2 green pepper chopped Method: - Using a mortar and pestle, crush the ginger, garlic, and red chilies, then fry them in oil until golden brown. - Add shallots or onion and fry for 1 minute over medium heat, then add the chicken. - Fry the chicken for 3-4 minutes, then add the red curry paste, turmeric, and red chili powder. - Cook over low heat until the oil separates, then add fish sauce and brown sugar. - Add the veggies followed by coconut milk.
