OLD SCHOOL BRAISED STUFFED TURKEY LEGS WITH CORNBREAD DRESSING This is a simple recipe that is so flavorful ,juicy and delicious RECIPE 3 large turkey legs 3 cups cornbread dressing salt and pepper Cajun poultry seasoning of your choice DIRECTIONS: Season turkey legs with salt pepper and seasonings place in 350 degree oven and cook uncovered for 30 minutes  Remove from oven and add 2 cups of water to pan and cover with foil and cook 2 hours on 350 degress Remove from oven and cut slit in middle of turkey legs and fill with cornbread dressing mix(mix should be thick ,not loose) Cook uncovered in 350 degree oven for 20-30 minutes until  dressing is completely  cooked and golden brown enjoy with cranberry sauce and turkey drippings or turkey gravy OLD SCHOOL DRESSING RECIPE: 1 pan OLD SCHOOL CORNBREAD ( crumbled) 2 quart OLD SCHOOL TURKEY stock  1 cup chopped celery  1 cup chopped onions  2 tablespoons chopped sage  2 tablespoons chopped thyme  2 tablespoons chopped rosemary  1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional) 1/2 cup chopped giblets (previously cooked for 2 hours)(optimal) 1# sage breakfast sausage 4 eggs beaten  In large stock pot  cook sausage until brown and crumbled Add onions, herbs ,celery and turkey stock  Simmer for 30-45  minutes Add turkey neck and giblets  Simmer another 10 minutes  Add stock to crumbled CORNBREAD in large bowl and add eggs  Mix well and season with salt and pepper  Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don't over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.
